BLACK BEAN CONFETTI SALAD- CLEAN EATING


This fresh black bean salad is simple to prepare, colorful and flavorful. Add yellow and orange peppers in addition to red and green peppers to make it even more vibrant. It is so versatile: enjoy as the main dish, a side dish or as an appetizer served with chips or fresh tortillas.


Black Bean Confetti Salad- Clean Eating
Adapted loosely from smittenkitchen 
 
1 15-ounce cans black beans, drained and rinsed
2 bell peppers,mix of colors, chopped into a small dice
1 medium white onion, chopped into a small dice
Juice of one lime
2 tablespoons olive oil
1/2 teaspoon ground cumin
1/2 teaspoon salt
1 teaspoon honey
pinch of cayenne
cilantro, optional
 
Mix beans, bell peppers and white onion in a large bowl. In a separate, smaller bowl, whisk remaining ingredients into a vinaigrette. Pour it over the bean mixture  toss it well and adjust seasonings to taste. Enjoy!

 
One thing that I have always struggled with was drinking enough water during the day. I would always have a glass sitting out on the counter by the sink (just like my mom did when I was a kid) but often it would sit there ignored for majority of the day. Finally, I have found a way that keeps me on track...
This is how I get myself to drink a gallon of water every day. It feels so good when I make my mark every two hours. Silly, yes, but it works for me.
