ROASTED GARLIC CAULIFLOWER


Roasted Garlic Cauliflower

Serves 4-6

2 tablespoons minced garlic
3 tablespoons olive oil
1 large head cauliflower, separated into florets
1/3 cup grated Parmesan cheese
salt and black pepper to taste
1 tablespoon chopped fresh parsley

Preheat the oven to 400 degrees F.
In a large casserole dish, toss the cauliflower with the olive oil and garlic.

Cover and bake for 25-35 minutes, stirring halfway through. Test for desired firmness. Season with salt and pepper.
Top with Parmesan cheese and parsley, and broil for 3 to 5 minutes, until golden brown.

  3. I wish I would have seen this sooner! I had two cauliflower heads that needed to be used up and made an okay casserole out of them. This dish would have been an instant favourite in this household. I'm bookmarking this recipe for next time (since I buy cauliflower often). Thanks for posting!
